Question 1

Can you use this year round? I live in Colorado and am looking for something that will take the weather.

I have not had the oven in the winter and our CA winters are nothing like yours in Colorado but with that....  The oven is a solid steel unit and you can get a cover to protect it from the elements.  I see no reason or parts on it that could not withstand the weather.  Obviously the unit stands a much better chance covered or under a overhang or in the garage ( it does roll quite easily on its wheels) when not in use.  If you leave it buried in snow it will have the same affect as any steel bbq.  I think it would actually be quite handy in the winter as you are building a fire and generating the heat from wood, something you may already be using in a fireplace or woodstove.  I have smoked ribs (5 racks with room for maybe 2 more), pork shoulders and wings.  The pizza has been my real interest and we have been making amazing pizzas that seem to get better each time.  I have made pizzas in the oven in my first 2 tries that I got compliments on from someone with experience on a $5,000 pizza oven. We entertain alot and have been making pizzas every sunday and as the midnite party snack and I am loving this thing.  If you have any other questions feel free to ask.

Question 2

I saw one one of these at the local H.E.B. Store. It looks very cool,  It is constructed of very thin gauge metal. Will it hold up over time?

I cant imagine it made of any heavier gauge as it would be impossible to move.  I have only had mine 7 months but it sits outside and has been used about 30 times.  Everything is as good as new with no issues or problems with the quality of the product.

Question 3

Can this oven get up to 800 or 900 degrees like other wood-fired ovens?

Hi Adam,No, it can't because it doesn't need to.  The ovens you are referring to rely upon large amounts of Thermal mass and big fires.  The stored radiant heat coming off of that Thermal mass is what you cook with.  With our oven, you'll achieve great results on the stone in the 500 to 600 degree range and most breads are baked between 350 and 400.  The fire burns below the stones and then surrounds the oven on the sides and top before leaving through the upper smoking oven. Question 4

What is the ideal way to get the temperature up in this?  Couldn't quite get it up to more than 450, is it a combo of wood and charcoal?

Hi Leticia,We've been trying to get a contact e-mail and preferably a phone number since last week.  We can definitely help you get squared away, but I want to spend a few minutes troubleshooting what you're doing now so we can correct it.  The oven will easily get up into hotter temperatures than you are achieving now, but that will depend upon fuel (chunkwood) selection and how you are monitoring the stone temperature.
