Our Barrel-aged Feta is cultivated December through April from a blend of all-natural milk from free-range sheep and goat herds. Curd is molded in large round forms, which are hand-turned frequently as they drain. As the whey drains, the cheese-crafter adjusts timing to perfect each wheel''s texture. After skillful dry-salting, wheels are placed in birch barrels for aging and preservation. By the end of the four-month maturation, a wonderfully creamy, rich, complex flavor is fully developed. Best feta ever.
Since I first tried Mevgal Feta in Poland in 2012 I cannot eat any other kind. I was unable to find this product locally in Dallas so I was very excited when I found it on Amazon.com. I especially like long refrigerator shelf life. If not contaminated( for example by fingers touching cheese) it keeps well for a long time in fridge even after opening.
